The Den at Fox Hollow Golf Course

At Fox Hollow Golf course, the course isn't the only thing above par. I visited the Den at Fox Hollow on a wintry day in December, a day when you normally wouldn't be headed to the golf course. I wasn't there to test my bravery and play 18 holes in the cold, but was there to enjoy a relaxing and cozy lunch at the Den. Being that it was the middle of December, I really wasn't expecting the course to be as beautiful as I remembered it during the summer, but it was. Set amongst the rolling hills and tall trees below Bear Creek reservoir, I could only dream of getting a round in when everything is green and lush. They offer 27 championships holes with 3 distinctly different nines. Any other day I'd be jumping to get on the course, but today I was there for a different reason... to eat.

As we came in and were seated at our table there was a very laid-back, comfortable feeling about the place. We immediately ordered the Alaskan Amber on tap, knowing that it would pair perfectly with anything we decided to have for lunch. I took a minute to look over the extensive breakfast, lunch, dinner and holiday menu with the desire to taste every single item. Knowing that was impossible, I decided to focus a little more on what hungry golfers might want when they come off the course with their buddies. So I asked the Executive chef Ryan Saunders to choose a few of his favorite signature items, focusing on appetizers.

Knowing we might fill up on just a couple of the appetizers, the chef decided to bring out an appetizer sampler. I couldn't wait to dive in. First I went in for their famous Nachos, which I guarantee would satisfy any golfer with a huge appetite. This pile of cheesey goodness starts off with home-made tortilla chips, topped with black beans, home-made guacamole and salsa, finished with savory seasoned chicken. It definitely satisfied my hunger, but I was hungry for more. Without hesitation I moved quickly onto the Pork Flautas. I took one bite and could taste all the many flavors this crunchy tortilla roll encompassed. Home-made pulled pork mixed with spicy Siracha sauce, jalapeno cream cheese, tomatoes, jalapenos and shredded cheese. Everything melts perfectly together and is an amazing explosion of flavor. If you're looking for a quick bite on the lighter side, the Tequila Shrimp are simply wonderful. Marinated in a light tequila-lime and cilantro sauce and cooked to perfection.

For the actual lunch entree we were served the Wasabi Chicken wrap. This is also a very light selection on the menu for those of you looking for a lighter choice with a ton of flavor. The chicken is grilled and rolled up into a flour tortilla with tomato, fresh avocado pepper-jack cheese and a soy wasabi aioli. The aioli gives the wrap a certain kick, and makes you crave more after each bite. The last item we were served will be the favorite of any chocolate lover. It was rich, smooth and dreamy. The Chocolate Dream Cake from the holiday menu, and I suggest you treat yourself to this decadently delicious dessert. It really made the whole meal complete.

Not only can you plan a luncheon for your company or large group of friends, but the Den also specializes in rehearsal dinners or wedding receptions. With their extensive banquet menu you are guaranteed to find exactly what you want. The Den holds up to 125, or if you'd prefer the gorgeous outside pavilion it can fit up to 250 people. Some of the menu will change to add a few new items based on seasonal ingredients, but they do keep most of their popular selections year round. You can tell that the chef has a passion for quality and it really speaks through his food. Whether you're coming to Fox Hollow for a round of golf or maybe a wedding, no matter what, you can relax knowing that you will be fed well. So come and indulge yourself in the food and fair at Fox Hollow.
